You know the great thing about a holiday weekend? Today is Monday, and it doesn’t suck. All day today, I thought it was Sunday. This is partially because I worked on Saturday, so instead of three days off I have had two. But I’m cool with it because when I go back to work tomorrow, it’s TUESDAY!
It is insane to think that we are only a couple days away from June 1st. Wow, could time please slow down for one second? Before you know it, it will be winter again. I know, I know… I should watch my mouth.
Speaking of that word – you know, the one that a Minnesotan doesn’t dare say in May (even though I already did… I have never been a very good Minnesotan). I made chili this week! Weird, right?
When we were talking the meal prep menu – hubster wanted a variety of meats and so he requested chili. And, although it is totally the wrong time of year for chili, I give him what he asks for. Not without a small protest though…
This is NOT your traditional chili. It’s 100 times better, I swear. Such a good mix of flavors and textures in this chili. We cannot get enough. And what do I do with things I love? I share them! So, now you can make your very own pot of delicious fiesta taco chili! Totally made that name up, but its like a party full of flavor and you know how I feel about tacos.
Fiesta Taco Chili
Ingredients
1lb ground beef
1lb chorizo
1 red onion, diced
1 red bell pepper, diced
1 can diced tomatoes
1 (16oz) jar salsa
4 oz diced green chiles
1 can corn
3 tbs chipotle adobo sauce
1 chipotle pepper
2 tsp minced garlic
2 tbs chili powder
2 tsp garlic powder
2 tsp onion powder
2 tsp paprika
1 tsp sea salt
1 tsp pepper
For garnish
Fresh cilantro
Sliced avocado
Shredded Cheese
Sour cream
Tortilla Chips
Directions
- Heat a couple tbs olive oil in a large stock pot. Add ground beef and chorizo. Brown & crumble with a spoon.
- Once meat is browned, add all other ingredients. Mix well.
- Bring to a boil over high heat.
- Cover and reduce heat to low
- Let simmer for 30 -40 minutes. Let those flavors blend!
- Top with your favorite taco toppings and eat up! You’ll be coming back for more!
