There is nothing better than a giant cup of coffee and Food Network on a Saturday morning!
We’re short staffed at work, so I’ve been putting in a lot of extra hours and somehow, still not feeling any closer to being caught up! So, I’ve been spending Saturday mornings at my desk trying to catch up on things. But not today! This is the first weekend in a while that I don’t have any plans. NOTHING! The whole weekend is mine and I am super excited about it!
It was whirlwind week with a super fun manager’s meeting on Monday where I got to display my TERRIBLE bowling skills. I really thought I was much better – maybe I’m only good at bowling when I’m drunk? Tuesday brought a whole day of training with a really amazing surprise at the end. AWARDS!
This is my little chance to brag, because I don’t do that often and it’s MY blog – so I’m allowed to!
My company presented Leadership Awards for 2016, and I was awarded with Community Manager of the Year. Wow. I wish someone would have caught my reaction on tape, because when I saw my name on the screen, it pretty much went like this: shock, excitement, more shock, confusion, a little emotional crying, and then happiness. Ha! I’ve never won such a big award before, it was such an honor. But let’s hope they never find out that I actually don’t deserve it – because really the amazing people on my team just make me look better than I am 😉 Seriously though, I just love the people that I work with and the people that I work for, I couldn’t be luckier.
Ok, bragging moment over. Now, back to the foods. Ive probably mentioned this many times, but my best recipe ideas come from my husband and this one is no different. One day we were sitting watching TV and he turned to me and said, “you should make goulash next week.” His idea was so great that I couldn’t wait, and I shopped the next day for the ingredients.
I remember eating goulash as a kid full of noodles and tomato sauce. I also started making a goulash recipe when I first started eating Paleo a couple years ago, that had no noodles in it. It just wasn’t the same. So I decided to make my goulash and eat it over a pile of gluten free macaroni noodles. So good! The great thing about goulash too is it is really easy as kind of pantry dump meal – you can put ANY veggies you want in this, and I bet it would be just as yummy.
Gluten Free Goulash
2lb ground beef
1 box gluten free elbow macaroni
1 zucchini, diced into small chunks
1 white onion, diced
1 can diced tomatoes (16oz)
1 can tomato sauce (16oz)
1 tsp Worcestershire sauce
½ cup crushed tomatoes
¼ cup beef broth
3 cloves garlic
1 tbs adobo sauce
2 tsp each; paprika, garlic powder, onion powder, sea salt, pepper
1 tsp each; oregano, celery salt
A sprinkle of parmesan cheese (optional)
- Cook pasta according to package directions, drain and set aside.
- In a large pan or dutch oven, heat 2tbs olive oil and add ground beef.
- When beef is cooked through, add onions, garlic and zucchini. Cook for about 4 minutes until onions are translucent and zucchini starts to soften.
- Add all seasonings, broth and tomatoes – lower heat and simmer for 20 minutes.
- Top cooked noodles with beef goulash and top with parmesan.
