What you need
1 – 12oz box gluten free penne pasta
2 tbs olive oil
1lb Italian Sausage
1lb Ground beed
1 – 16oz can diced tomatoes
1 – 16oz can tomato sauce
1 small yellow onion, diced (USE A FOOD PROCESSOR – NO MORE TEARS!)
3 cloves garlic, minced
3 cups spinach
½ tbs Italian seasoning
2 tsp basil
2 tsp oregano
2 tsp garlic powder
1 tsp onion powder
Salt + pepper to taste
2-3 cups mozzarella
1 cup cheddar cheese
What to do
Preheat oven to 350°
Cook your pasta per the instructions on the package – do not overcook! Take them off the heat and drain a few minutes short of your preference of the “perfect pasta”. The noodles will cook a bit more in the oven so you don’t want to overdo it and end up with mushy penne.
While the pasta is cooking, heat skillet large enough for 2lbs of meat over medium heat.
Add your garlic, onions, Italian sausage and ground beef
When cooked through, transfer meat to a large mixing bowl
Add spinach, tomatoes, sauce, and all seasonings. Then add in pasta. MIX WELL!
Grease a baking dish really well. Then add ½ the pasta/meat mixture. Cover with desired amount of cheese.
Add the other half of the mixture and you guessed it, more cheese!
Cover with aluminum foil and bake for 20-25 minutes until cheese is nice and melted.
Let cool and enjoy!
