I just use “stir fry” as a blanket term for anything that I cook in a skillet that includes meat and vegetables. Something tells me, I am probably not using the name correctly. Yep, just looked up the definition and apparently, the recipe I am about to share is missing two key elements of “stir fry.”
1. It isn’t cooked in a Wok. I don’t even own one of those. That means all my stir fry recipes are frauds!!
2. There also are not any Asian style ingredients in this one. So at least my other recipes have some of that going for them with the soy sauces, sesame oil, and other fun ingredients that make my home made dishes taste better than a Chinese buffet.
Oh well. My dream is to someday write a cook book that is comprised SOLELY of stir frys. Big dreams over here. So, I will go ahead and redefine that definition to include anything I want! So here it is, a mixture of yummy delicious vegetables and some spicy sausage in my very own “spicy chicken sausage stir fry.”
I meant to post this recipe about a month ago but I lost the ingredient list. I have this problem, I really love office supplies. Like, REALLY love them. What does this have to do with the recipe you ask? Well, not a whole lot. Except that my love of office supplies means there are a lot of notebooks floating around this apartment. In the twenties probably. And the problem with that? I always pick up a different once to make notes in while I am cooking. Not a great practice. I should probably buy a few new ones – one for dessert recipes, one for dinner recipes, etc. Yes, I think new notebooks are more appropriate then using the ones i already have. So, now that I have gotten a bit off topic. I wrote down the ingredients I included in this recipe and then lost the notebook. But now it is found, so here you go.
Spicy Chicken Sausage Stir Fry
What you need
2 red bell peppers, sliced
1 container baby bella mushrooms, sliced
1 white onion, chopped
1 zucchini, sliced
1 zucchini squash, sliced
1 package andouille chicken sausage (I used Bilinkski’s), sliced
3 cloves garlic, minced
3 tsp onion powder
3 tsp garlic powder
2 tsp garlic salt
2 tsp sea salt
1 tsp pepper
1/4 cup chicken broth (organic, yo!)
What to do
Mix it all together in a large sauce pan over high heat until the vegetables start to soften.
This takes about 10 minutes depending on how many veggies you use.
Turn heat down and simmer for as long as you please! And then….. enjoy!
