My favorite part of my new way of eating is finding not only a taste but a CRAVING for food that I have never liked the taste of before. I have been spending a lot of time experimenting in the kitchen with foods that I love and foods that I have never liked. You know what I have found? My taste has completely changed. I don’t like foods that I always liked and I love foods that I always hated. Funny how things change.
Brussel sprouts: Who knew they could be so delicious? I have been fed Brussel sprouts many times in my life. My sister has been known to force me to eat them at family dinners so that my niece and nephew will eat theirs also. That is when a napkin or a dog come in handy….
The first time I enjoyed Brussel sprouts was when my dear friend, Dawn made them at a dinner party. Her Brussel sprouts roasted with balsamic and bacon were truly delicious.
So when my husband and I decided we were a bit bored of the usual sautéed zucchini and squash, we decided to give Dawn’s recipe a shot. Unfortunately, I didn’t have the right ingredients so I had to make it up on my own.
I tossed the Brussel sprouts in olive oil and garlic before roasting them on 375 for about 20 minutes. They turned out to be a lovely balance of soft and crunchy with just enough flavor. It gave us a nice change from our normal vegetable routine and I learned to love Brussel sprouts.
Sweet Potatoes: Another food that I have just never wanted to eat. Don’t get me wrong, I am not anti-potato. I have been known to make a full meal out of mashed potatoes smothered in ranch dressing. Love, love, love them. But, that love has never extended to Idaho’s sweet cousin though.
Every year at Thanksgiving, I would take sweet potatoes to be polite. I would take one bite and then push them onto my dad’s plate with the rest of my uneaten food. (Aren’t dads great for that? I’m 26 and my dad will still take the food I don’t finish, we don’t waste!)
Now, I know that sweet potatoes aren’t technically paleo but they are still a vegetable, so I will practice in my rebellious way and continue to include them as a go-to. I bought them because I found a recipe for sweet potato egg bake that looked really good. I ended up just peeling, slicing and baking the sweet potatoes with a little bit of olive oil and garlic. Now they have become a staple because my family just can’t get enough. I still need to try that egg bake though…
*Olive oil + garlic = my go to seasoning for EVERYTHING, yumm!*
I could seriously eat sweet potatoes with every meal. Though we limit potatoes to one or twice per week.
With this new found love of vegetables that were foreign to me before, I can’t wait to see what else we can come up with! Next weekend – we will try EGGPLANT! I promise, there will be pictures!
